PRODUCT OF THE MONTH: CARROT

Nutrition: carrot contains an appreciable carbohydrates and a high fibre content both soluble and insoluble, amount which normalizes the intestinal, avoiding constipation transit and protects against cancer of the colon and cardiovascular disease, although probably the most remarkable aspect of this food.


In the vitamin contribution, carrot contains a large amount of carotenoids provitamínica activity A (once in the body are transformed into vitamin A, vitamin necessary for the proper functioning of the retina and especially for night vision or low-light and for the good condition of skin and mucous membranes). The most abundant is beta carotene, which some studies have been attributed a preventive role opposite diseases such as cancer, cardiovascular disease, cataracts and macular degeneration senile, given its modulator and antioxidant capacity of the immune response. Follows the alpha carotene, whose serum levels have been linked inversely with the presence of coronary artery disease and formation of arterial plaque, thus amounts trace (minimum) of cryptoxanthin.
